So, because it's officially winter time now, it's definately soup time! I was just out for a walk with Maggie and it is some cold out there! So warm yourself up with a home made soup. It's a piece of cake really.
First you need: 2 cups dried yellow peas
8 cups water or vegetable stock
1 small onion small diced (brunoise for the culinary crew)
1 bay leaf
salt and pepper to taste
4 tsp olive oil
Second you need to: 1) Dice the onion
2) Heat a 3 L or bigger pot at medium heat
3) Saute onion in the oil until translucent stirring
occasionally
4) Rinse the peas thoroughly and add them to the
onions along with the stock or water (cold water
please!), and bay leaf
5) Give the peas and stock a stir and bring to a boil
6) Reduce heat and let simmer on medium-low heat
until the peas are as soft as mush. Season with
salt and pepper as you go.
7) When you're satisfied with the mushy consistency
of your peas, remove the bay leaf, and take a
hand blender and blitz up your soup until it's
smooth.
8) Re-heat, check the seasonings and enjoy!
9) As an added bonus, we always love to add
chunks of smoked salmon to this soup!!
This recipe probably serves 6 or 7 bowls depending on the size of your serving.
